    Delicious chicken

    I used to buy heritage chickens from the now defunct Cook’s Venture. Their chickens were good, but often sloppily butchered and largish with quite a lot of fat included. I decided to try these Hudson Valley ones when they had a 25% off sale. Although the Cook’s Venture ones had free shipping, even with the shipping cost the Hudson Valley chickens were cheaper (with the 25% off sale), smaller (~ 3 lb.) and tastier. I’ll definitely buy again, especially if they have another sale!

    The best damn chicken on the market!

    I have fed thousands of folks my special chicken in the past almost 50 years. I have had all types of chickens from many producers and have even gone to the source to see how they were raised. This chicken has surpassed any on the market, online, and in stores. It is flavorful, tender, and juicy. And the yellow skin is no joke. It’s not partially yellow, it is all yellow. With a thin breast bone, it yields a bounty of delicious white meat and the dark meat is also luscious. I cooked it simply by rubbing salt and pepper under skin then using some softened butter under the skin. I cooked it in a hot cast iron skillet on top of a bed of leeks and shallots which caramelized beautifully. In a hot oven. This was a true French meal celebrating the bird.
